Manual harvest starting in the second week of September
METHOD OF PRODUCTION
Natural drying for 90-120 months with weight loss greater than 30%. Pressing in the winter months with subsequent slow fermentation at a controlled temperature. At the end, the wine ages in wooden containers for a period of not less than 18 months.
SENSORY DESCRIPTION
Notes of plum and cherry on the nose, with hints of raspberry refining its finesse. On the sip a full body enveloped in the aroma of roasted spices given by the measured aging in wood.
