Manual harvest starting in the second week of September
Production method
Natural drying for 90-120 months with weight loss greater than 30%. Pressing in the winter months with subsequent slow fermentation at a controlled temperature. At the end, the wine ages in wooden containers for a period of not less than 18 months
Sensory Description
The nose impresses with complex balsamic fragrances, slowly giving way to notes of ripe cherry and blackberry. Full-bodied and velvety in the mouth, perfectly integrated with silky, fine tannins.
