Manual harvest starting in the second week of September
METHOD OF PRODUCTION
Natural drying for 90-120 months with weight loss greater than 30%. Pressing in the winter months with subsequent slow fermentation at controlled temperature, then interrupted acirca halfway through to allow for natural sweetness.
SENSORY DESCRIPTION
Rich, fragrant nose characterized by notes of honey and overripe fruit. Full, sweet mouthfeel perfectly balanced by natural acidity.
